RECIPE: How to make Tabouleh

Sex and the City 2 is hitting theatres on May 27th and the girls are headed to Abu Dhabi! Grab a cosmo (see the CostumZee forum Recipes post to learn How To Make the Perfect Cosmo!) and pair it with this delicious Middle Eastern dish, Tabouleh. It’s light and flavorful and perfect summer sun food fare that won’t weigh you down. And it’s perfect for vegetarians since it’s a meatless dish, as well.

Here’s what you’ll need to make it:

* 1.5 cups fine bulghu wheat

* 1 large bunch parsley, minced fine

* 1 bunch scallions, minced fine

* 4 tomatoes, chopped finely

* 1 small bunch fresh mint or 2 tsp. of dried mint

* half a teaspoon of cayenne pepper or crushed red pepper

* 1/3 cup olive oil

* 1/3 cup lemon juice

* salt to taste

* OPTIONAL: half a can of tomato paste

##Combining your ingredients##

Step 1: Soak bulgur wheat in cold water. Make sure it’s covered with water for an hour or so.

Step 2: Chop up your vegetables, tomatoes, parsley, and scallions and set them aside.

Step 3: After an hour has passed, squeeze out the excess water from your bulghur wheat with your hands. Mix it with other ingredients except the olive oil, lemon juice, and salt.

Step 4: Finally add the olive oil, lemon juice, and salt to your vegetables and bulghur wheat. If you prefer a moister, more tomato-y tabouleh, add some tomato paste. If you prefer a drier, more “green” tasting tabouleh, you can omit it.

Step 5: Put in a sealable bowl or tupperware and place in the refrigerator for at least an hour. Tabouleh tastes better cold and when the flavors have sat for awhile and had a chance to blend.

Step 6: Serve with pita bread and hummus… Or all by itself!
